SPRING BEET & CARROT CARPACCIO

Beet Carrot Raspberry Salade

The first weeks of spring have furnished me with an irresistible urge to clean things, air out, lighten up… I want to drink fizz, see colorful flowers and hear the melodies of birds and celebration. When I dressed this plate with this funny shaped carrot, I thought, yes, this is how I feel right now. Maybe there is something to abstract art after all.

So here it is, just a simple idea that you can do what you would like with, not a very strict recipe:

spring beets and carrots
raspberry vinegar (or white vinegar mixed in the blender with some raspberries)
olive oil and maybe a splash of hazelnut or walnut oil

for the little rollups:

thickly sliced ham
sauerkraut
toothpicks
a cornichon for garnish
salt and pepper

Place some sauerkraut on the ham and roll up.  Place toothpicks along the roll and slice the log into bite-size pieces.

Slice the veggies as thinly as possible using a mandolin or some bad-ass knife skills. Decorate the plate as your heart desires and finish with vinegar, oil, sauerkraut – ham rolls, and anything else. Serve with crusty bread and a glass of bubbly rosé!
