Tajine is a morocain dish, referring to anything cooked in this cone-shaped dish. Here, I made a chicken tajine with dried apricots, thinly sliced lemons, and spices such a coriander, ginger, and white pepper. Best served with couscous, or semoule. Personally, I find that a good rosé is a nice match, but you can explore whites that are not too dry. Here I served with champagne, which was of course not bad at all!
