My parents-in-law picked this pink pomegranate from a tree growing by the road while vacationing in the south last summer. They had heard that I have a soft-spot for pomegranate, and were not sure what to do with the fruit, so it ended up in my kitchen. A little left over meringue, a touch of cacao, and these verrines were born. Refreshing and colorful with a fun play on textures.
