Strawberry topped Angel Food Cake

Leftover egg whites search for new recipes in my kitchen. I wanted something different from meringues and congolais, but just as light and airy… then I remembered a cake from a long time ago, a cake topped with strawberries and whipped cream… and I searched for it: Angel Food Cake.

Simple to make, white and fluffy, and not too sweet, this cake is the perfect match for whipped cream and strawberries. A blog called Baking Bites had a very nice recipe. I divided it by 4 to make a mini-cake, since I had only 3 egg whites and the recipe calls for 10-12.

Serve with a graceful dab of freshly whipped cream or a coulis of red fruit.
