a simple recipe with a crunchy bite and tangy lemon dressing:
- 1 fresh red beet
- 1 turnip
- 1-2 tbs olive oil
- juice of a lemon
- sprinkle of cayenne pepper
- salt and pepper to taste
Peel and grate the beet and turnip. In a salad bowl, beat together the oil and lemon juice with some salt and pepper. Add the grated beet and turnip and mix well with a wooden spoon. Top with a sprinkle of cayenne pepper and serve at room temperature or cold.
